Virgin Piña Colada
This piña colada recipe is a sweet and creamy drink for pineapple and coconut lovers of all ages.
|4 to 6 slices fresh pineapple|
|1/2 can coconut milk|
|4 to 6 ice cubes|
|1 tablespoon sweetened coconut shavings (optional)|
Shake the can of coconut milk vigorously before opening. Stir after opening. It's okay if this looks like it's separated, because it has. Add half a can to the blender.
Slice the fresh pineapple into 1/4 inch slices. Halve and add to the blender. You don't have to core the pineapple, but you can if you want.
Add ice cubes and blend for 20 seconds, gradually increasing speed to medium low. Serve and enjoy.
We've found that the coconut shavings add a nice sweetness and texture, but it's not for everyone. (You could also add a little rum if you were inclined.) We haven't tried adding a pinch of brown sugar, but that's next on our list of enhancements.
Makes two drinks.
