Can You Make Smoothies with a Food Processor?

Yes, if you're cautious. If your food processor has powerful ice-crushing blades, you're probably in the clear. Otherwise, be very careful about how you layer your ingredients (see How to Make a Smoothie). If you're using solid fruits such as apples, cut them into quarters or smaller pieces so that they don't bind the blades. Start slow and increase speed gradually only as you see that your food processor is running effectively.

A food processor's wide, shallow bowl doesn't create the same swirling current as a tall blender jar, so ingredients are more likely to get stuck at the edges instead of pulled back down to the blade. Use a little more liquid than you would in a blender—this helps things circulate—and expect to stop once or twice to scrape down the sides with a spatula.

Skip whole ice cubes unless your model specifically advertises ice crushing; they're the single most common reason a food processor stalls or the blade assembly leaks. Frozen fruit (sliced before freezing) blends far more reliably and gives you the same cold, thick texture.
